Why your bread arrives tomorrow, not this afternoon

We hold no stock. Nothing is baked until you order it, and the dough needs the hours it needs — here is exactly how the timing works.

The most common question in our WhatsApp is some version of "can I get it today". The honest answer is almost always no, and the reason is worth explaining rather than apologising for.

There is no shelf

Eleven Bites has no shop and no display case. Nothing is baked in advance and nothing sits waiting to be sold, which means there is no tray of yesterday's loaves to send you quickly. Every order starts a bake.

The cutoff

Order before 5pm Dubai time and your bread is baked overnight and delivered the next day. Order at or after 5pm and it moves to the day after. That is the whole rule, for everything we make.

The slow ones

Four things take the longest: sourdough, baguette, sablé and semolina maamoul. Sourdough and baguette because a long ferment is what makes them worth eating — you cannot rush a starter and get the same loaf. Sablé and semolina maamoul because the dough needs resting time before it will behave. They keep the same 5pm cutoff as everything else: before it, the next day; at or after it, the day after.

Then the road

Delivery is a flat AED 25 anywhere in the seven emirates, and free when your items come to AED 300 or more after any code. The courier calls before setting off so somebody is there to take it. We do not promise an hour window at checkout, because a bakery that promises 2pm and arrives at 6pm has done more damage than one that said "tomorrow" and meant it.

What this buys you

Bread that was in an oven a few hours before it reached your door, rather than bread that was in a warehouse. It is the whole trade: you wait a day, and nothing you eat is a day old.
